Sinigang na hipon (Shrimp in sour soup)


Sinigang is a soup based with sampaloc, guava, kamias... a variety of style of sour soup. These day Sampaloc is commonly used to make sour soup. An instant mixture ready for use can be found inthe grocery.


Ingredients:
  • 1½ lb shrimp (with head)
  • 1 bunch water spinach (kangkong), cut in 3 inch length
  • 1 pcs.raddish (labanos), sliced diagonal
  • 2 pieces medium-sized tomatoes, quartered
  • 1 large white onion, quartered
  • 8 cups water
  • 1 pack sinigang mix (tamarind soup base mix),and
  •  pepper (or long green pepper)
  • 3 tbsp fish sauce (patis)
  • optional string beans,(sitaw) ,and eggplant (talong)

Procedure:
  1. Bring water to boil, then put tomatos and chopped onions.
  2. Let it out for at least 3 minutes.
  3. Put shrimps in the boiling water followed by the sinigang mix.. simmer for 2 minutes
  4. then put water spinach ( kangkong) and chilli. Let it stand for 3 minutes before serving. (Water spinach can be cooked easily)

    Good for 3 to 5 servings.
