Pinakbet (mixed vegetables)


Pinakbet is an Ilocano specialty dish that originated from the northern part of Luzon Island, Philippines. A mixed vegetables with shrimp paste or fish paste. Try making one now.




Ingredients

  • 1/4 kilo pork with fat (cut into very small pieces)
  •  2 medium size Ampalaya (cut into 8 pieces each)
  •  1 small size kalabasa
  •  2 medium size eggplants (cut into 8 pieces each)
  •  about6-10 pieces okra (halved) 
  •  6 pcs. winged beans (sigarilyas) and string beans (sitaw)
  • 4 tablespoons bagoong shrimp
  • 1 small garlic head (minced)
  •  2 small onions (diced)
  •  6 pieces tomatoes (quartered)
  •  Pinch of pepper
  •  1 1/2 cup water
  • 3 tablespoons brown sugar
  •  3 tablespoons oil

Procedure:

  1. Saute minced garlic, sliced onions, sliced tomatos then put the sliced meat (pork) until golden brown.
  2. Put the peeled shrimps let it stand for a minute or until the color turns to pinkish red.,
  3. then put shrimp paste (to taste / as desired)
  4. Add water, simmer until meat is tender.
  5. Add sliced squash, simmer for at least 2 minutes or until its soft then put string beans..mix well and simmer for 2 minutes,
  6. followed by ampalaya (bitter courd) simmet for a minute then put sigarilyas. Mix well and simmer for a minute
  7. then put chili to add a little bite of spicy flavor.

    Good for 3 to 5 servings.
