Chicken Curry


Chicken Curry originated from India Reinvented to fit to Filipino taste.

Ingredients:
  • 4 boneless chicken thighs
  • 1 cup of sliced onions
  • 1 potato
  • 1 bell pepper
  • 1 carrot
  • 5 cloves of garlic
  • 1 can of coconut milk (13.5 oz)
  • 2 tablespoons of curry powder
  • 2 tablespoons of butter
  • Olive oil
  • Salt, as desired

Procedure:

  1. Saute minced garlic and chopped onions followed by the chicken,
  2. mix then add a dash of salt to taste, black pepper, then add coconut milk.
  3. Let it boil until then add cut potatos and carrots..simmer until vegetables almost cooked.
  4. Then add on curry powder.. simmer for 5 minutes.
  5. add red and green bell pepper.
  6. Let it stand for several minutes before serving to let the aroma of the pepper and curry blend together.
    Good for 8 to 10 persons.
