Binagoongang Baboy ( Pork with Shrimp Paste) is a local specialty in the Philippines usually served with rice to compliment the salty, sweet and hot flavor of the shrimp paste. |
Ingredients
- 1½ lbs. pork shoulders, cut into cubes
- ¼ cup shrimp paste (cooked)
- 2 medium plum tomatoes, diced
- 1 large yellow onion, diced
- 1 teaspoon minced garlic
- 2½ cups beef broth
- 1 medium Chinese eggplant, sliced
- ¼ teaspoon ground black pepper
- 3 tablespoons cooking oil
- 2 tablespoons brown sugar
How To Prepare:
- slice egg plant horizontally or ur desired shape..
- fry sliced egg plants until golden brown on both sides. Set aside.
- For the Pork. Saute minced garlic, chopped onions, sliced fresh tomatos then put the meat and saute..Let it stand for 2 minutes until oil extract starts to appear.
- Add shrimp paste to taste. Then cover.. cook under low fire until meat is tender.
- Once meat is cook.. Arrange fried eggplants on the plate on circular shape or any desired design then put the Binagoongang Baboy in the Center.
- Add some sliced tomatos and chilli for garnishings
Good for 2 to 3 servings.
