Bicol Express




Bicol Express is a specialty dish from Bicol Region (southern part of Luzon) a dish with a very spicy taste. Best served with rice or sometimes eaten raw during drinking alcohol. 
It's famous for its meaty ang spicy flavor! Try this.


Ingredients:


  • 1/2 lb. pork belly, diced
  •  2 cups thin coconut milk
  •  4 cups chili pepper, seeded and sliced
  •  1-1/2 to 2 cups fresh alamang (tiny shrimps)
  •  1 medium-sized onion, minced
  • 3 cloves garlic, minced
  •  1 tbsp. salt and pepper
     
  •  3 pcs of siling labuyo (red Chilli)
     
  • 2 pcs of siling haba (green Chili)


How To Prepare:



  1.  Saute minced garlic, chopped onion
  2. followed by the meat (pork) let it stand until meat turns into brownish color.
  3. Add salt to taste, ground pepper, a little water, simmer until meat is tender.
  4. Add coconut milk.. let it simmer until sauce starts to extract oil
  5. then add red ang green chilli. Let it stand for 5 minutes before serving.

    Good for 4 to 6 servings.
