Paksiw na Tambakol Sa Gata ( Vinegar base with coconut milk)


Paksiw is a Filipino dish. A vian that will last for weeks as the vinegar serves as the preservative of the food. Paksiw comes with different ways of cooking and style depends on the region.




INGREDIENTS:

  • 500 grms Fish (Tambakol or Yellow Fin)
  •  Talong (egg plant) 
  • Green Onions sliced 
  • Ginger sliced 
  • Garlic minced 
  • Red Onions 
  • 1 cup Coconut Milk 
  • 1 cup Vinegar 
  • 1 cup water 
  • Salt and Pepper 
  • Chilies (green and bird's eye)
 How To Prepare:
  1. Arrange the fish on the wok, minced garlic, sliced ginger, sliced green onions (spring onions) sliced red onions, coconut milk, water, vinegar, salt and pepper.  
  2.  Bring to boil with no cover, (be sure not to mix the process while on its first 5 minutes of boiling to let the vinegar acid evaporates. 
  3. Once u see the eyes of fish pops up (it determines its already cooked). Drop all the vegetables - okra (lady finger) , ampalaya (bitter cord) simmer with cover for 5 minutes or until the vegetables are cooked. 
  4. Then put the chillies and cover. Let it stand for several minutes before serving.

    Good for 5 to 6 servings.

  1. can i skip the coconut milk and just make paksiw na tambakol with just the vinegar.
